If you’ve taken a break from foodie happenings in Brighton, you may have missed the fact that there’s a gorgeous new fine-dining restaurant on the scene. Yes, Dilsk, the beautifully crafted baby of former 64 Degrees’ colleagues Tom Stephens (head chef) and Madeleine Riches (operations manager), is now open in Drakes Hotel on Kemptown’s seafront.

It’s already been widely praised – with their laminated brioche attracting the raviest of rave reviews – but if you want to check out what their picture-perfect plates taste like for yourself, now’s the best time to do so as they’re currently offering a lovely 20 percent discount on their inventive short (five courses for £55) and long (10 courses for £95) tasting menus on Tuesdays to Fridays, and the two bank holiday Sundays, until 17th May. Dilsk’s focus (it’s named after the red seaweed) is on sustainable food with top-notch ingredients sourced from ethical growers and local suppliers, and they’ll happily cater to vegetarians (but not vegans or those with dairy intolerances just yet). And with Stephens’ culinary background – he helped move 64 Degrees to a tasting menu and trained under Michelin-starred Tom Kerridge and Steve Drake – it’s no surprise that it’s this good.
