Wolfox‘s new Japanese fine-dining restaurant opens this June

Cafe and restaurant group Wolfox Collective are adding to their portfolio of cafes and restaurants with a Japanese fine-dining restaurant on the new mixed-use Circus Street development near Grand Parade.

Opening on Wednesday 14th June, this won’t be their first foray into Japanese food as they also own the excellent plant-based restaurant Kusaki (feature pic) off London Road – rated by the Michelin guide, as well as us. And, just like Kusaki, the design looks spot on, if the photos we’ve seen on social media are anything to go by, at least.

Food-wise, they’re not giving too much away just yet, saying there will be a mixed meat, vegetarian and vegan menu with a focus on healthy dishes created from sustainable and locally sourced foods. They’re fully committed to sustainability in the restaurant design, too – for example, the tabletops are made near Lewes using coffee waste.

“Despite the popularity of Japanese cuisine, there is not currently a fine-dining experience on offer in the city and we are creating a place for people to enjoy special occasions and smart dinners, inspired by nature and seasonality, which will be a real treat for Japanese food lovers,” Wolfox founder and CEO Fabio Lauro has said.

Fumi announced on their Instagram that they would be kicking off with a phased opening: from Wednesday 14th June, they’ll be opening during the day only for speciality coffees (developed and roasted by Wolfox and Pelicano) and healthy breakfast and lunch bowls.

Their plan is to have a full grand opening on Wednesday 28th June with morning, lunch and dinner service at the restaurant on the ground floor of the six-storey The Office at Circus Street.

“We have chosen to do this in stages so that our staff can be fully trained in all areas of service, creating a better Japanese dining experience for all,” they said on Instagram.

Yet another reason to head over to the area if you haven’t been there yet. What are some of the others, we hear you cry? The brand-new South East Dance Space, of course, the food at White Cloud coffee (the kitchen’s run by Fumar Cozinho chef Sean Brailsford), and the award-winning architecture and design by Shedkm, in particular, the corkscrew escape stair and Alex Chinneck’s 25-metre-high spiral staircase artwork, ‘A spring in your step’.
