there’s a new grill restaurant in hove

There’s (another) new restaurant in town and, with chef and founder of Great British Charcuterie, Phil Bartley, behind the new eatery, you can be confident the food is going to be good.

So what’s on the menu? Given the restaurant’s name and its founder’s background, it won’t come as a surprise that the focus is on meat, but not just any meat. It’s all about quality produce here, with beef the hero ingredient on the Carne menu.

They say their ingredient-driven menu has been designed around simple dishes to allow the quality of the produce they source to stand out. There are six different steaks on the menu, as well as plenty of dishes featuring south coast fish – think whole lemon sole with beurre blanc and fried capers and whole baked monkfish tail with roast garlic and lemon butter.

About that produce: they’ve selected ingredients from a few small, highly regarded suppliers, with grass-fed beef from Sussex producers, such as Trenchmore Farm, and high-end Scottish Wagyu producer Highland Wagyu.

They’ve even got a dry-ageing cabinet on site, which they say finishes the beef with “optimal tenderness and taste”.

You can expect great range drinks, too, with the small-but-perfectly-formed cocktail menu having been created by Atelier du Vin’s owner Steve Pineau. (And you don’t have to be eating in the restaurant to come in and enjoy a cocktail in the plush-looking bar area, either).

Wine-wise, the focus is on great British wines, with local vineyards such as Ridgeview and Bolney featuring on their list, and they’ve got a sommelier on hand to help you choose.
