There’s another new restaurant in Brighton… and, after keeping the location under wraps until Thursday’s launch night, we can now reveal that new all-day dining restaurant Cyan has taken up residency at The Grand, in the spot previously occupied by GB1. Check out the transformation below!
It’s a welcoming space and we loved being able to see the chefs preparing the food and drink right in front of us – the specially designed micro-herb fridge for cocktail garnishes is a particularly nice touch. We snacked on sliced-to-order charcuterie and corn-on-the-cob ribs with celery salt, rose pepper and Bloody Mary ketchup.
So what can we expect from the full menu? Focusing on small plates, platters and sharing dishes, the food blends fresh, locally sourced produce (they’re supplied by the likes of Great British Charcuterie, B&N Fish and Trenchmore Farm) with a handpicked selection of seasonal, unique and high-quality ingredients from around the world.
Head chef Kirk Johnson is taking inspiration from culture, heritage and travel with dishes to suit all dietary preferences and a monthly-changing seasonal menu. He’s looking forward to getting creative with the dishes, too: “With 15 to 20 ever-changing dishes we certainly have an exciting challenge on our hands, but we’re looking forward to keeping things interesting for our diners with a variety of options for meat eaters, pescatarians, vegetarians and vegans.”
The team really want Cyan to be somewhere you can go whatever the time of day, so think everything from glasses of organic wine to leisurely brunches, small plates, sharing platters and late dinners – the kitchen will stay open until 10pm. Hurrah for late dinners!
And the 80-cover restaurant has kept other aspects close to home, too: local artists Weez & Merl kitted out the interior with their fantastic art that’s made from recycled waste plastic and Brighton-based tailors Gresham Blake created bespoke uniforms for the staff.
