book now: forgotten food tasting menu

We were sad to hear the news that plans for 15 Vine Street didn’t make it to fruition, but, the good news is that Aaron Dalton (the chef behind the smokehouse dream) is back in the kitchen and will be popping up across the city over the next few months. First up, he’s joining the team at the award-winning tasting restaurant, Isaac At.

Hosting a one-off event at the 22 cover restaurant on Gloucester Street, they will be celebrating the forgotten foods of Sussex with an eight-course tasting menu on Saturday 9th November. Isaac At Head Chef, George Thomas, and ex Smoking Goat head chef, Aaron Dalton, are both big on Sussex produce and will be using each of their four dishes to showcase the best of the region on a plate, whilst keeping food waste to a minimum and introducing diners to lesser-known ingredients.

George told BOTI, “Our concept at Isaac At is all about showcasing the best produce that’s available to us here in Sussex, at any given time, so teaming up with Aaron to showcase some of the lesser-known food in Sussex felt like the perfect match, giving us a chance to try new things. We’ve been doing a lot of experimenting recently, so if you’ve been to one of our new Test Kitchen events, you may have even tried one of the dishes for this event in the making.”

Aaron, known for his popular Four pop-up series, will be bringing his classic smoking techniques to the Sussex inspired kitchen: “It’s great to be able to get back into a Brighton kitchen, especially with a team that is so passionate about Sussex produce and up for trying new things. We’re refining the dishes at the moment, but guests can expect to try things like Oxheart or Cod throat on our one-off tasting menu.”
